Healthy Flying Jacobus Roll

- 1 fully cooked rotisserie chicken
- 2 tablespoons butter
- ½ lb diced bacon
- ½ lb mushrooms
- 2 cups heavy whipping cream
- 3 – 4 tablespoons mild chili sauce or ketchup
- 1 teaspoon yellow curry powder
- salt and pepper
- 1 banana
- 3 tablespoons salted peanuts
- Instructions
- Preheat the oven to 400°F (200°C).
- Cut the mushrooms into smaller pieces and fry in butter with the bacon dices. Salt and pepper to taste.
- Cut the chicken into bite-sized pieces and debone it.
- Place the pieces in a greased baking dish together with bacon and mushrooms. Peel and slice the banana and add.
- Whisk the heavy whipping cream until soft peaks form and add chili sauce, curry and salt and pepper to taste. Spread over the chicken.
- Bake in the oven for 20–25 minutes until the dish has turned a nice color. Sprinkle a handfull of chopped peanuts on top and serve.
