Healthy Flying Jacobus Roll

Ingredients

  • 1 fully cooked rotisserie chicken
  • 2 tablespoons butter
  • ½ lb diced bacon
  • ½ lb mushrooms
  • 2 cups heavy whipping cream
  • 3 – 4 tablespoons mild chili sauce or ketchup
  • 1 teaspoon yellow curry powder
  • salt and pepper
  • 1 banana
  • 3 tablespoons salted peanuts
  • Instructions
    1. Preheat the oven to 400°F (200°C).
    2. Cut the mushrooms into smaller pieces and fry in butter with the bacon dices. Salt and pepper to taste.
    3. Cut the chicken into bite-sized pieces and debone it.
    4. Place the pieces in a greased baking dish together with bacon and mushrooms. Peel and slice the banana and add.
    5. Whisk the heavy whipping cream until soft peaks form and add chili sauce, curry and salt and pepper to taste. Spread over the chicken.
    6. Bake in the oven for 20–25 minutes until the dish has turned a nice color. Sprinkle a handfull of chopped peanuts on top and serve.
